Apricot and Walnut Stuffing Balls

This will make approxametly fifteen portions

 

You will need:

  • 1lb of prok sausage meat
  • Salt/pepper to season
  • Teacup of Dried Apricots sliced thinly
  • 100 grams of Walnuts
  • 1 medium sized red onion chopped finely
  • 2 cloves of garlic chopped
  • Tea cup of breadcrumbs
  • Olive oil

Instructions 

  • Sweat the onions and garlic in a pan for about 15 minutes and set aside to cool
  • Place the pork sausage meat in a mixing bowl and season well
  • Break the walnuts in your hand into the pork mixture and add the apricots
  • Add the onion and garlic along with the bread crumbs
  • Mix together using your hands
  • grease a tray with olive oil and roll the mixture into balls about the size of a golf ball and place in the oven for about 15 minutes
